Resumen: | La empresa Mindala, se desarrolló como fundación de ayuda a las comunidades indígenas sin ánimo de lucro en el departamento de Nariño, se instauraron a través de los últimos años como una empresa, la cual pretende colaborar con estas comunidades generando empleo en recolección de materia prima, diferentes frutos a través del departamento. Para esto, ellos buscan establecer un catálogo de productos que representen estas comunidades, empezando, con una cerveza artesanal. Este documento presenta un estudio junto a la empresa Mindala sobre la elaboración de un producto nuevo y peculiar en el mercado, la cerveza artesanal de uchuva, fruto también conocido como “Physalis Peruviana”, una bebida innovadora que combina la tradición artesanal cervecera con un exquisito sabor típico de Nariño. |
Abstract: | The Mindala company was developed as a non-profit foundation to help indigenous communities in the department of Nariño. It was established in recent years as a company, which aims to collaborate with these communities by generating employment in the collection of raw materials. , different fruits throughout the department. For this, they seek to establish a catalog of products that represent these communities, starting with a craft beer. This document presents a study together with the Mindala company on the development of a new and peculiar product on the market, craft beer made from cape gooseberry, a fruit also known as “Physalis Peruviana”, an innovative drink that combines artisanal brewing tradition with an exquisite typical flavor of Nariño. |
