| Resumen: | Esta monografía mostró algunos beneficios e impacto obtenidos por empresas de la industria láctea al implementar las buenas prácticas de manufactura (BPM). La metodología utilizada para la elaboración de este trabajo se basó en la búsqueda y recuperación de información en bases de datos y fuentes de Internet. En este documento se relaciona información respecto a las diferentes causas que pueden generar la falta de inocuidad en los lácteos, el estado inicial en el que se encuentra América del Sur con respecto a la implementación de las BPM, el impacto y beneficios recibidos al implementar esta herramienta, y algunas acciones de mejora sugeridas por diferentes autores para implementar las BPM en la industria láctea. |
| Abstract: | This monograph showed some benefits and impact from dairy companies in implementing good manufacturing practices (BPM). The methodology used for the elaboration of this work was based on the search and retrieval of information in databases and Internet sources. This document relates information regarding the different causes that may lead to lack of safety in dairy, the initial state in which South America is located with respect to the implementation of BPM, the impact and benefits received in implementing this tool, and some improvement actions suggested by different authors to implement BPM in the dairy industry. |
