Resumen: | La actual investigación lleva como propósito la evaluación técnico-financiera del proceso para la obtención de aceite de açaí partiendo de los desechos del proceso de despulpado de esta fruta a una escala de laboratorio, la cual se llevó a cabo bajo los parámetros direccionales del Tecnoparque del SENA. Cabe resaltar que existen diferentes tipos de aceites, dependiendo de su origen se llegan a clasificar en aceites vegetales o animales, y estos son altamente apetecidos en la industria debido a su aporte nutricional contribuye a darle un valor agregado a diferentes productos tradicionales, bien sean para el consumo humano o para el cuidado corporal. El açaí es un fruto de bajo consumo a nivel local, actualmente las compañías procesadoras de este fruto lo están comercializando en forma de palmitos, pulpa y productos derivados. |
Abstract: | The current investigation has as its purpose the technical-financial evaluation of the process to obtain açaí oil starting from the waste from the pulping process of this fruit on a laboratory scale, which was carried out under the directional parameters of the Technopark of the SIGN. It should be noted that there are different types of oils, depending on their origin, they are classified into vegetable or animal oils, and these are highly desired in the industry due to their nutritional contribution, which contributes to giving added value to different traditional products, whether for human consumption or for body care. Açaí is a low-consumption fruit locally, currently the companies that process this fruit are marketing it in the form of hearts of palm, pulp and derived products. |
