Resumen: | El presente trabajo tiene como propósito la elaboración de un colorante azul aprovechando la jagua destinada a la industria de alimentos como una alternativa a los colorantes artificiales que, hoy en día presentan problemas de seguridad. En el desarrollo de este proyecto se lleva a cabo un análisis sensorial, fisicoquímico y proximal del fruto del árbol Genipa Americana L., este último será estudiado para ser empleado en una extracción sólido-líquido por medio de una técnica convencional Soxhlet, manejando etanol de alta pureza para diferentes cantidades de materia prima. En relación a lo anterior, se determinaron algunas características fisicoquímicas en los extractos obtenidos estableciendo las condiciones más favorables con el fin de concentrar e identificar un metabolito secundario conocido como genipina. En referencia a la prepurificación del analito, se efectuaron dos métodos distintos con el propósito de evaluar el rendimiento de extracción para la concentración de la aglicona. |
Abstract: | The present work has as its purpose the elaboration of a blue dye taking advantage of the jagua destined for the food industry as an alternative to artificial colorants that, today, present safety problems. In the development of this project, a sensory, physicochemical and proximal of the fruit of the Genipa Americana L. tree, the latter will be studied to be used in a solid-liquid extraction by means of a conventional technique Soxhlet, handling high purity ethanol for different amounts of raw material. In relation to the above, some physicochemical characteristics were determined in the extracts obtained by establishing the most favorable conditions in order to concentrate and identify a secondary metabolite known as genipin. In reference to the pre-purification of the analyte, two different methods were carried out with the purpose of Evaluate extraction performance for aglycone concentration. |
