Resumen:	El desarrollo de este trabajo de trabajo de grado tuvo como fin realizar una reestructuración técnico administrativa de la panadería mi Leidy ubicada en la ciudad de Bogotá D.C, siendo esta una micro empresa familiar dedicada a la producción y comercialización de productos de panadería, pastelería y bollería. Para el desarrollo del trabajo de grado se utilizaron y aplicaron diversas herramientas de ingeniería industrial a través de las cuales a partir del reconocimiento del entorno y las condiciones actuales que afronta la micro empresa, se identifican factores externos e internos que puedan llegar a afectar el desempeño de esta. Con el fin de dar profundidad al tema es necesario reconocer la situación actual de la empresa a partir de visitas a esta, desarrolló de entrevistas e investigaciones respecto al estado actual del sector, como también la interpretación el entorno en el cual se encuentra la empresa con el propósito de generar vías de desarrollo para la mejora en los procesos productivos y administrativos de esta, a partir de la identificación de fortalezas, debilidades, oportunidades y amenazas para la conformación de estrategias a llevar a cabo dentro de la micro empresa.
Abstract:	The development of this graduation paper had a goal to make a restructuring technically administrative of the Mi Leidy’s bakery located Bogotá city, this being a small family business dedicated to the production and commercialize products of bakery, pastry and bollería products. For the development of graduation paper were used and applied various tools of industrial engineering through which starting from the recognition of the environment and the current conditions facing the small business, identify internal and external factors that may affect the performance of this. Whit the purpose to give depth to the subject it is necessary to recognize the current status of the company from visits to this, developed interviews and research regarding the current status of the sector, also the environment in which the company is located in order to generate developing to improve productive and administrative processes, from the identification of strengths, weaknesses, opportunities and threats for create strategies to be carried out within the small business.
